The main degradation drivers

Oxidation is the big one: dissolved oxygen and oxygen permeating the packaging degrade sensitive vitamins like C and some B vitamins. Light drives photodegradation of riboflavin and others. Low pH, high storage temperature, and trace metal ions (which catalyze oxidation) all accelerate loss. Different vitamins are vulnerable to different drivers — vitamin C is oxygen-sensitive, while some B vitamins degrade by non-oxidative routes that oxygen control alone won't fix.

The formulation levers

You can slow degradation by formulation: adding antioxidants to protect oxygen-sensitive nutrients, chelating agents to tie up catalytic metal ions, adjusting pH where the product allows, and choosing more stable derivative forms of a vitamin. Encapsulation can shield fragile actives from the surrounding liquid. Each lever buys retention — and reduces the overage you'd otherwise need.

Packaging is part of the formula

The container is a formulation decision in disguise. A high-oxygen-barrier package, an opaque or UV-blocking material, and headspace control all change how fast vitamins fade. The same drink in clear PET and in an aseptic carton has different retention — so packaging choice and overage have to be decided together.

Design for end-of-life, not filling

The number that matters is the nutrient level when the consumer drinks the product, not when it's filled. Good beverage formulation works backward from the end-of-life claim through expected degradation to the level and overage needed at filling — turning stability from an afterthought into a design input.
